Queso Blanco

This Queso Blanco dip is a family favorite. I was inspired to make it years ago after a trip to my favorite place to eat...the San Antonio Riverwalk. The Mexican food on the Riverwalk has always been near and dear to my heart. Recreating this Queso Blanco takes me right down to the river (minus the two hour drive!). It's the perfect dip for your game day fesivities.

My parents and brothers were all born in San Antonio...along with all of my extended family. I'm the lone Austinite of the bunch. But frequent trips to SA, its Riverwalk, and El Mercado areas filled me with a love for Mexican food...especially Queso Blanco. I could bathe in this dip, y'all. It's amazing. My preteen son shares my affection for all things cheesy and Tex-Mex-ish, so this is his fave, too. We're serving it this game day with some convenient snacks from José Olé that make it a winning combination. Hope we can say the same for the team we root for!

My oldest son likes to have his José Olé Chicken and Cheese Chimichangas almost enchilada-style...drizzled in Queso Blanco. I can barely keep up with that preteen's appetite...snacks like these are perfection for him. 


Queso Blanco Dip | This easy Tex-Mex dip is perfect to serve for any gathering or tailgate party.
The poblano pepper is the star of this dip. And it's not too spicy, making it perfect for all of your guests' tastes.

Queso Blanco

Ingredients:
  • 2 tablespoons olive oil
  • 1 poblano pepper, chopped
  • 1 medium onion, choppped
  • 4 cups shredded Monterey Jack Cheddar Cheese
  • 1/2 cup milk
  • 1/4 cup chopped cilantro
  • 1 (4 ounce) can chopped green chiles
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cumin
Directions:
Heat olive oil in medium-sized saucepan over low-medium heat. Add pepper and onion. Slowly sauté and carmelize for 30-45 minutes (the onions will turn a deep, golden color). Resist the urge to quickly cook over high heat...the carmelizing effect makes these so delicious. When they're done carmelizing, transfer to a medium glass bowl, or the top of a double boiler, juice and all. (Tip: I use the same pan that I carmelize in as the bottom of a double boiler once the peppers and onions are removed.)
Bring water in bottom of double boiler to a boil and turn to low-medium heat to allow it to just simmer. Place top of double boiler (or your glass bowl) on the top of the water. Add all other ingredients to bowl and continually stir until cheese starts to melt. Once it's melted, turn heat to low and continue mixing for five more minutes. You can leave it on the stove like this over low (you made need to replenish the water if you leave it for an extended period of time) to keep warm or transfer it to a small slow cooker to serve in. 
Serve with José Olé products, veggies, and chips for a delicious game-day snack.
