Who wants to lug out the ice cream maker when you can whip up this Vanilla Chai Tea Latte Ice Cream in just a few minutes with a hand mixer? It's absolutely delicious, too. #IDelightinChai
A few years ago, I went and bought an ice cream maker. In the five years we've had it, it's been used about five times. Um, yeah. My issue is that when I want to make ice cream, I want to make it now. I don't want to have to freeze the little bowl for 24 hours just to be able to start making my ice cream at that point. So, the whole concept of no-churn/no-machine ice cream is kind of stellar for someone like me.
And please don't give me the "just store the bowl in the freezer" speech (looking at you, mom). The last time I did that, a few months into its freezer stay, my ice cream bowl had heaps of glitter frozen to it (still not even sure how that happened). I had to wash it multiple times to remove said glitter...which caused the bowl to thaw and put me right back at square one. Big sigh of exasperation.
I simply can't handle ice cream makers, y'all. It's sad, really. But, seriously, check out how ridiculously easy this ice cream is to make (I jumped on the whole "let's make ice cream in a loaf pan thing"...it's really fun and simple!).
It's so creamy and delicious. The key is mixing it with your mixer until it doubles in volume. Then just fold in the other couple of ingredients. And I'm dying over the Vanilla Chai Tea Latte flavor. International Delight made this even easier on me by coming out with the most delicious Vanilla Chai Tea Latte ever.(And I don't even have to go to the coffee house to get it...score!)
And what on earth would summer be without ice cream?!? The fact that this recipe only takes a few minutes to whip up (plus hands-off freezing time) makes it a winner. It's a way to say a little time for other fun summer things...you can take back ten minutes for yourself, even! :)
Once the batch is frozen, you can take a little more me-time to indulge in a bowl (or two, I won't judge!). The International Delight Chai Tea Latte takes this ice cream to flavor nirvana, y'all. It's crazy good.
It's so much easier to clean up than the big ol' honkin' ice cream machine.
Vanilla Chai Tea Latte Ice Cream
Ingredients:
- 2 cups heavy whipping cream
- 1 cup International Delight Vanilla Chai Tea Latte beverage
- 1 teaspoon vanilla
- 1 can sweetened condensed milk
Directions:
Combine heavy whipping cream and International Delight Vanilla Chai Tea Latte beverage together in a large bowl. Using a mixer, (can use a stand mixer with whisk attachment if you prefer), beat mixture on high for about five minutes...until the volume of the mixture has doubled in size. It won't form peaks, but it will become thicker and double in size. Turn off mixer and fold in vanilla and sweetened condensed milk. Keep folding mixture into itself until all of the condensed milk is incorporated.
Pour into two loaf pans and cover with plastic wrap. Freeze for six hours, or until firm.
