These Homemade Cereal and Nut Bars are the key to my summer mornings. Check out this delicious recipe and how I take a little time for myself during those lazy, hazy, crazy days.
One of the main rules of summer is that you prepare your own breakfast. I'm all about the pancakes and good times in the kitchen in the mornings...but those are for weekends, usually. Monday through Friday brings about its own set of breakfast situations. If the boys can get up and help themselves to a Homemade Cereal and Nut Bar and a piece of fruit, then I can at least cross off a few things on my own list in morning. One sweet way mom starts her day is with a lovely Chai Tea Latte. Since it's not easy to pack everyone up and head to the coffeehouse, I treat myself to a cup of International Delight's Chai Tea Latte at home. It's delicious. It comes in both vanilla and caramel and can be served either hot or cold. With our blazing three-digit-days, I usually opt for the chilled version. It's my way to take back ten minutes of my morning...and get the day kicked off right!

I'd love to hear some of your own ideas for entertaining the kiddos all summer...especially if your work situation is similar to mine. I try to just work in the mornings and then squeeze in some pool or movie time in the afternoons. I do take Fridays off since my husband is usually off on those days, too. But, the schedule is never perfect...I'd love to hear what others do, too.
Having a ready-made breakfast on hand is always a win-win for everyone during those summer days. I even included some delicious creamer in the glaze of these bars...just to sweeten them up a little more.

Homemade Cereal and Nut Bars

Makes 12-18 bars
- 1/3 cup honey
- 1/4 cup brown sugar
- 1/4 cup unsalted butter
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon ground cinnamon
- 3 cups toasted oat cereal
- 3/4 cup unsalted peanut halves
- 1/2 cup sifted powdered sugar
- 1-2 teaspoons International Delight Coldstone Sweet Cream Creamer
Mix honey, brown sugar, and butter in a large saucepan. Bring to a boil and, while continually stirring, allow to gently boil for about two minutes. Turn off heat. Add cereal and peanuts and stir gently to combine all ingredients. Pour into a foil-lined 9x9 pan and press down with a spatula until smooth. Allow to cool for 30 minutes.
While bars are cooling, mix glaze of powdered sugar and International Delight Coldstone Sweet Cream Creamer. Drizzle glaze over bars. Allow glaze to firm and cut into bars. Store in an airtight container for up to a week.
I may sneak a cereal bar for myself with my latte, too! Summer perfection.
