These easy Double Lemon Cake Mix Cookies are the perfect spring cookie!
It's finally lemon season...yay! These Double Lemon Cake Mix Cookies have become my family's' faves lately. I love the fun crackly look that these get. They're slightly crisp on the outside but perfectly light and fluffy on the inside.
The double lemon comes from adding lemon essential oil to a lemon cake mix. I swear by Young Living Essential Oils myself, the lemon oil is cold-pressed from the rind. It takes 75 lemons just to create one bottle. The taste is perfection in these cookies.
Double Lemon Cake Mix Cookies
Ingredients:
- 1 box lemon cake mix (not the ingredients on the back, just the cake mix, dry)
- 2 large eggs
- 1/3 cup coconut oil
- 3 drops Lemon essential oil
- 1/2 cup powdered sugar
Directions:
Combine dry cake mix, coconut oil, eggs, and lemon oil in large bowl with an electric mixer until just mixed. Spoon out dough by heaping teaspoonful and roll into a ball. Roll each dough ball in powdered sugar. Place on parchment-lined cookie sheet (12 per sheet).
Bake in a preheated 375 degree oven for 8-10 minutes, watching carefully so they don't get too crisp. Cool on a wire rack.
Makes 2-3 dozen cookies.
