The waffles pictured above were for my sons...I added a bit of sugar-free chocolate syrup and sprinkles to theirs, as well. They absolutely loved the yogurt...so much so that mama may have to start hiding these treats for herself {I bought a dozen and they're all gone! Pfft.}
Honestly though, I did get to sample my fair share of these babies, too...they were delish. Tuesdays are generally my days for culinary "me moments". I have a meeting that morning and then usually come home to bake, photograph, and try new creations for the blog. Since I'm all alone during the day, I usually take some time to myself to sample and maybe kick my feet up a bit. I made these chocolate waffles with yogurt last week and they were perfection for my own little "me moment".
Easy Chocolate Waffles Topped with Mint Chocolate Chip Yogurt
1½ cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
3 tablespoons white sugar
3 tablespoons unsweetened cocoa

1¼ cups buttermilk
⅓ cup coconut oil
2 large eggs, beaten
1 teaspoon vanilla extract
1 cup dark chocolate chips

Müller® Mint Chocolate Chip Yogurt (3-4 containers)
Spray your waffle iron with cooking spray and allow it to preheat while you prepare your batter.
Sift together flour, baking powder, salt, sugars, and cocoa in a large bowl. In a small bowl whisk together buttermilk, oil, eggs, and vanilla. Slowly add the small bowl of wet ingredients to the dry ingredients and stir until just combined. Batter will be lumpy.
I have a four-waffle (square-shaped) iron and used about a ½ cup of batter per waffle. Pour batter onto hot waffle iron then sprinkle liberally with dark chocolate chips. Close the waffle iron and allow to cook. I prefer a crispier waffle, so I let mine go a little after my "done" light has popped on. I would give it about five minutes and check it for doneness, if your machine is the "light-free" kind.
I was able to get 8 waffles out of this recipe on my waffle iron. Depending on your iron, you may get more or less.
Top each waffle with 1/3 cup of Müller® Mint Chocolate Chip Yogurt and sprinkle with a few more chocolate chips.
Serves 8.

I love this idea. I've done chocolate waffles, but I've never thought about adding mint in. Great idea!
