This dish is fabulous for so many reasons...it's a one-pot wonder, it's yummy, and it's healthy. You really can't go wrong. I have to giggle because when I tried this recipe out with my kiddos over the weekend, they devoured it. Seriously...devoured. My oldest is pretty meat and potatoes {and by potatoes, I do not mean that of the sweet variety} and doesn't always {read: ever} go for meatless meals. As he was scraping his spoon against his empty bowl, I revealed that it's Sweet Potato Chili. His response: "Really? I thought those were carrots. Can I have some more?"
Score one for mom.

And I picked up my sweet potatoes {for both this dish and for my Thanksgiving dishes} at my local Sam's Club.
- Make a plan ahead of time. If you've got a big holiday event during a week, plan for it by allowing a small splurge and stay on track the rest of the week.
- Lighten up traditional holiday dishes with some clever substitutions and alternative recipes. Click here for some great ideas.
- Make mini desserts instead of overindulging in multiple pieces of pie {guilty!}. The Sam's Club Healthy Living Made Simple Magazine suggests filling shot glasses with a mixture of pumpkin pie filling and whipped cream for a smaller-portion of the traditional holiday dessert.
- The holidays are still meant to be enjoyed. Practicing major portion control and having small servings of the things I really don't want to miss out on help keep me on track all season long.

Sweet Potato Chili {recipe from Healthy Living Made Simple}
Makes 4 servings | Prep time: 10 minutes| Cook time: 25 minutes
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 teaspoons chili powder
- 1 cup canned vegetable broth
- 1 ½ sweet potatoes, cubed {try to keep the cubes all the same size to ensure even cooking}
- 1 can Mexican-style stewed tomatoes
- 8 oz. pinto beans, drained
- 8 oz. black beans, drained
- ½ can corn, drained
- 2 teaspoons Italian seasoning
- zest of 1 orange
- cilantro
Directions
- Heat olive oil in medium sauce pan over medium-high heat. Add onion and sauté until golden brown. Add chili powder and stir for 1 minute.
- Add broth and potatoes, cover pan and reduce heat to medium. Simmer until potato pieces are almost tender {about 10 minutes}.
- Add tomatoes with juices and pinto and black beans. Add corn. Simmer uncovered until chili thickens and potato is very tender {10 minutes}.
- Mix in orange zest and Italian seasoning. Season salt and pepper to taste. Serve. Can be transferred to a slow cooker to be kept warm for a few hours, if you'd like to prepare it ahead of time. Garnish with cilantro, if desired.
