The hint of spice is an unexpected fun twist in these easy-to-make
Mexican Chocolate Cake Mix Cookies.
Aren't cake mix cookies the bomb-diggity? I'm definitely on a kick lately...they're just so easy to make as well as customize. And Mexican Chocolate is one of my absolute favorite flavor combinations!
1 box chocolate cake mix
2 eggs
1/3 cup coconut oil {melted or solid, either way works}
1 {heaping} tablespoon cinnamon
1/4 - 1/2 teaspoon of chili powder
pinch of cayenne pepper {or more, to your taste preference}
powdered sugar + more cinnamon
Directions:
Mix cake mix, eggs, oil and spices together. Mix one part cinnamon with one part powdered sugar {about one heaping tablespoon of each}. Roll one inch cookie batter balls into powdered sugar and place two inches apart from each other on prepared cookie sheet. Bake at 375 from 8-10 minutes. Cool on cookie sheet for ten minutes and then move to wire racks.
Makes about two dozen cookies, {depending on how much cookie dough you snack on...wink!}
These were absolutely delicious! The perfect little treat for my cheat day. Never mind that I had like a dozen.
