I just love the fourth {we call it FOJ, but you may have picked up on that by now...LOL}. My parents always made it festive when I was a kid. Often, we would spend the day shopping and eating in Fredericksburg, Texas {if you've ever been to Fredericksburg, you know it's CUTE, with a capital C}. It was the perfect down-home FOJ. We would head back to Austin that evening with a picnic and a blanket and watch the fireworks on Auditorium Shores {with everyone else in Austin...no joke...everyone}. Many of those FOJs included lots of down-home, all-American desserts.
And is there anything more down-home and all-American than Strawberry Shortcake? I love coming up with new traditions for my own family, just as my parents did for me when I was a kid. And I think this dish would be the perfect new FOJ tradition. Adding blueberries and creamer takes this up a notch for FOJ fun and deliciousness! I may or may not have justified this dish for breakfast yesterday, too...
Instead of traditional milk, these shortcakes are sweetened with the deliciousness of International Delight Sweet Cream creamer. Ummm...hello, yummy.

Ingredients>>>
- 4 cups strawberries, sliced
- 2 cups blueberries
- 4 2/3 cup biscuit-type baking mix
- 1 cup International Delight Sweet Cream creamer
- 1/3 cup sugar
- 6 tablespoons salted butter
- 1 cup heavy whipping cream
- 3 tablespoons sugar
Directions>>>
Combine strawberries and blueberries and set aside {if desired, you can sweeten them with 1/4 cup sugar, but the shortcake is fairly sweet on its own, so I prefer not to}.
Mix baking mix, International Delight Sweet Cream creamer, 1/3 cup sugar and butter until dough forms. Turn dough out onto surface sprinkled with additional baking mix. Roll out to 1/2 inch thick. Cut out star shapes with 3" or 4" star-shaped cookie cutter. Place on prepared baking sheet about 1" apart from each other. Bake at 425 degrees for 8-11 minutes, watching carefully so they don't get too brown.
Whip heavy whipping cream with sugar until stiff peaks form.
Place one shortcake star on plate and top with berries and whipped cream. Top with additional shortcake.
Makes 12 desserts.
