This Chicken Poppyseed Fruit Salad is one of our summertime faves.
We made it for our weekly Saturday Night Supper Club last week.

Welcome to Saturday Night Supper Club!
We started this tradition of eating a nice family dinner {most} Saturday nights in our dining room, with candles, the fancy plates and "high/low" conversations. My husband is a high school principal and my boys are both involved in various activities. There's not many weeknights when we're all home at the same time to have dinner together {not sure I'm ready to admit it, but we have a lot of car meals...especially right now during baseball season}. But Saturdays are our day. We fix a meal together and enjoy it as a family. Last week, we made our delicious Chicken Poppyseed Fruit Salad...be sure to grab the recipe at the end of this post!
Chicken Poppyseed Fruit Salad
The combination of chicken and fruit may seem a bit off at first. But, one bite of this and you will LOVE me! :)
Ingredients:
- Your favorite fruits: strawberries, apples, grapes, blueberries, kiwi, bananas and whatever else you might like.
- Poppyseed Dressing {your favorite bottled kind works well for this}
- 2 lemons
- 1 bag Tyson Grilled & Ready Chicken Breast Strips, warmed according to package directions.
The Tyson Grilled & Ready Chicken Breast Strips are perfect for this recipe. During the summer, I don't like to turn on the stove much since it heats up the entire kitchen. I can pop this chicken in the microwave for a quick and easy meal.
Start by juicing your two lemons into a small bowl. Chop your apples and bananas and immediately place in the lemon juice to soak while you chop everything else. This will prevent browning. If you decide to use bananas {we don't, my kids don't care for them}, you may want to add them separately to each plate. If there's leftovers, the bananas make it difficult to store overnight. By leaving them out of the bowl, it's much easier.
Chop the rest of your fruit and place into a large salad bowl. Add in your chicken. Drain apples and bananas and add them in {again, you can wait on the bananas if you'd like}. Gently toss. Plate the salad and top with your favorite Poppyseed Dressing. It looks really pretty plated atop lettuce leaves.
We like to serve this alongside crusty French bread.
