It's not Easter in our family without deviled eggs!
These Pimento Cheese Deviled Eggs are a delicious twist on the classic.
Ingredients:
- 12 hard boiled eggs {cooled}
- 1/2 cup jarred roasted red bell peppers
- 1/4 cup shredded white cheddar cheese
- 1 tsp. Worcestershire sauce
- 1/2 cup mayonnaise
- pinch of Kosher salt
- fresh ground pepper
Directions:
You will only need six of the egg whites, but you'll use all twelve yolks. This is sort of personal preference. I like the way deviled eggs look when they're "piled high", so I make a double batch of filling. I always save my egg whites for salads.
Cut eggs in half and add yolks to a food processor bowl. Add the whites you're using to your serving tray. Add red bell peppers, cheese, Worcestershire sauce, mayo, salt and pepper to the food processor bowl, too. Pulse until mixture is incorporated and peppers are chopped. You'll need to pause and scrape the sides at least once. Transfer mixture to a sandwich bag.
Snip the end of the sandwich bag and pipe the filling into your egg white halves.
Makes 12 deviled egg halves.
