White Chocolate-Carrot Cake M&M Bars

These White Chocolate-Carrot Cake Bars are the perfect Easter dessert!

This recipe comes with a lil' story. A couple of weeks ago, I was walking my kids home from school. My friend, Bunnie, pulls up next to us to chat...and offer us the most amazing treat: White Chocolate Carrot Cake M&Ms. Lawsy, they were good. And I only tasted one...and even counted the points for it on my WW tracker!

But her words to me were this: "please make something with these things and then blog about it". And when your aptly named friend, Bunnie, requests an Easter treat on the blog...you oblige. And bring her the taste tester since you can't eat it {until your allotted cheat day when you stuff your face with them in the dark pantry, where no kid can find you}.


So, sweet friend...these are for you: White Chocolate-Carrot Cake M&M Bars {see what kind of mischief you started?}.


I loosely based these off of the Loaded M&M Oreo Cookie Bars from Averie Cooks, a bar which my family has grown to love!


Ingredients:
3/4 cup matchstick carrots
1 stick salted butter (1/2 cup), melted
1 large egg
1 cup dark brown sugar, packed
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup all-purpose flour
18 Golden Oreo Cookies
3/4 cup White Chocolate Carrot Cake M&M's 

Directions:
Chop up carrots in a food processor, or carefully mince with a sharp knife. Prepare an 8x8 pan with parchment paper or cooking spray. Pour melted butter into a large bowl. Crack egg into a custard cup and gently whisk to break yolk. Slowly add the egg to the butter, mixing a little at a time, to prevent cooking the egg. Add the brown sugar, cinnamon, carrots, and vanilla, and mix until smooth. Pour in the flour and mix just until combined, being careful not to over-mix. 

Chop Oreos into quarters, roughly. Fold them into the batter, just until incorporated. Spoon batter into prepared pan. Sprinkle the White Chocolate & Carrot Cake M&Ms over the top of the batter. You can use your fingers to press the candies into the batter.

Bake in a 350F (preheated) oven for about 25 minutes. Cool completely before cutting.


They're incredible!! So yummy with a bit of spice: a fantastic Easter treat.
