Tex-Mex Grilled Cheese

Here's a twist on a classic sandwich: 
Tex-Mex Grilled Cheese. It's a mouthful of YUM, y'all.

This version of grilled cheese happened a bit by accident. I went to make my boys quesadillas a few weeks ago and was out of tortillas {gasp!}. I grabbed bread and a new tradition was born. We've made these several times now and LOVE them!


And...a new grill pan makes these a CINCH and they turn out perfectly every time!

For these sandwiches, I used: A simple white bread from the bakery, softened butter, Queso Cotija {a delicious Mexican melting cheese...found in most grocery stores}, fresh salsa {use your favorite recipe or a refrigerated variety}. 

Let me preface this by saying, when I was initially contacted to review the above griddle pan, I thought, "oh, sure...sounds fun." And I want to be completely up front with you and say that I'm 100% forthcoming in every review I write...and this thing friggin' ROCKS MY SOCKS OFF. Like, for reals, y'all. I was compensated with the pan in exchange for my review...however, I'm truly considering buying a second one on my own. They are that awesome. In the words of my husband after he made pancakes the other day...."LIFE-CHANGING". We've always been plug-in griddle people. I can safely say, my old plug-in griddle is making its way to Goodwill. 

This Grillware Griddle is from Wilton Armetale and is from their Gourmet Grillware line found here. It can be used on the stove top {where I love to use it}, in the oven and on an actual grill {perfect for veggies}. 

I use mine on the stove across two burners, both of them turned on. It heats the entire thing very evenly. And it works perfectly to serve off of once the food is cooked...and it keeps the food nice and hot. {I took quite a while to photograph these sandwiches. When I was done, they were still piping hot for my family to enjoy...that never happens. My kids weren't familiar with this concept of a hot meal...at least they haven't been since I started blogging.}.

Like any normal grilled cheese, I buttered one side of the bread slices and put them down on the hot griddle {I set mine to medium heat, per my burner temperature}. Then I spread  some salsa on each slice, topped with the cheese {that I sliced up}, more salsa and another slice of buttered bread {butter side up}. I cooked for a few minutes and then flipped. Perfection, y'all.

Like I mentioned before, the griddle can go from stove top to table top for serving.

I paired these sandwiches with some tomato soup that I mixed some more salsa into...to give it a kick! Arriba!
