Rosemary Shortbread
When I first tasted a shortbread cookie with rosemary, I thought, "Wow...this is a total grown up cookie". I loved the surprise of an herb in a cookie (it seemed so fancy and sophisticated). These Rosemary Shortbread Stars are perfect with a cup of hot tea or even left under the tree for Santa with a cup of milk. It'll be a nice change from all of the chocolate chip cookies everyone else decides to leave for him.


Rosemary Shortbread Stars Recipe

I love these cookies because of their simplicity. They're made with just four ingredients. There's a good chance you may have them all on hand (or in your garden). We have more than one large rosemary plant in our yard and I'm constantly just running out to them with scissors (they shudder when they see me coming). I use rosemary in so many dishes...and even sweets like these cookies!

And a word to the wise...they melt in your mouth and are impossible to resist! So, hide them if you need to (wink). Also, I really prefer a plastic star cookie cutter for these. My metal ones always get bent up and aren't the ideal star shape after a use or two. Grab this same set I use HERE on Amazon. 

Recipe Ingredients

Rosemary Shortbread (Make into Stars or Other Shapes)

Ingredients:

  • 3/4 cup butter, softened
  • 1/3 cup sifted powdered sugar
  • 1 1/2 cups sifted all-purpose flour
  • 2 tablespoons chopped fresh rosemary (I like to chop each little rosemary "leaf" into thirds for this recipe...the texture it adds to the cookie is fantastic!)


Directions:

  • Cream butter with electric mixer. 
  • Add in powdered sugar and beat well. S
  • lowly add in flour, beating on very low speed until it’s all blended. 
  • Fold in rosemary.
  • Roll your dough out to 1/4 inch thickness and cut out star shapes with your star shaped cookie cutter (you'll need to ball up, re-roll and repeat a few times). 
  • Place onto a cookie sheet lined with parchment paper.
  • Bake at 325 for 17 minutes, until lightly browned.
