'Tis the season for lots of partying. I feel like I'm making a dish almost every day to bring to something. I decided to simplify this year and make easier dishes, to lighten my load in the kitchen {and in the sink}. This Pimento Cheese Dip is rich and fabulously cheesey {that's the best, no?}. It's hot and bubbly and will keep everyone coming back for more.

I decided to simplify holiday cooking this year and make easier dishes, to lighten my load in the kitchen {and in the sink}. This Pimento Cheese Dip is rich and fabulously cheesey {that's the best, no?}, but not difficult to make. It's hot and bubbly and will keep everyone coming back for more. It's the perfect nod to the classic pimento cheese sandwich...in HOT form!Pimento Cheese Dip Recipe
Ingredients:
- 1 1/2 cups mayonnaise {can use lower fat version}
- 2 {8 oz} bags shredded cheddar cheese {I like to use one mild and one sharp}
- 1 {4 oz} jar diced pimento, drained
- 1 tsp. Worcestershire sauce
- 1 tsp. finely grated onion
- 1/2 tsp. cayenne pepper + additional for garnish
- chopped parsley
Directions:
- Stir together first five ingredients and the half teaspoon of cayenne until well mixed.
- Spoon mixture into a pie plate.
- Bake at 350 for 20 minutes, until dip starts to turn golden.
- Garnish with parsley and sprinkle with more cayenne pepper, if desired. I went heavy on the parsley to create the look of a wreath, for a special holiday look.
