This Southwest Corn Dip is a mouthful of flavor and yum. Perfect party food.
It's like summertime's comfort food. Just good.
Grab the above ingredients and let's whip this up!
Combine cream cheese, sour cream and cheddar cheese. Blend with mixer until completely combined. Fold in corn, chiles {drained as much as possible}, green onions and chopped jalapenos {you can alter the amount of jalapeno based on your heat preference...sometimes I just omit it}. Sprinkle lightly with smoked paprika, if desired. Serve with veggie or corn chips.
Don't make this too far ahead of time or the green onion flavor will take over.
