Simple Blackberry Honey Muffins

This muffin recipe goes together easily for a quick morning breakfast or as a bread alongside your dinner. The sweetness is light and not too over powering...making these a simple delight.

The Kyvan company sent me some yummy items to try, including a blackberry honey that made me go weak in the knees. I just had to put it into a recipe and this is what it landed in. YUM!

The blackberry in this honey is light and not over-powering...just a lovely fruity note to an already delicious flavor. The muffins I incorporated it into were an already simplified recipe...just improved on a bit with this yumminess. 

Simple Blackberry Muffins | Not too sweet, just the perfect little snack anytime of day.
Ingredients:
- 2 cups all-purpose flour 
- 1/2 cup sugar 
- 3 teaspoons baking powder 
- 1/2 teaspoon salt 
- 1 cup milk
- 1 egg
- 1/4 cup butter, melted
- 1/4 cup blackberry honey {the kind I used is from Kyvan and is fantastic}

Directions:
Combine flour, sugar, baking powder and salt in medium bowl. Combine milk, egg, butter and honey in a separate bowl. Add wet ingredients to dry ingredients a little at a time, mixing until incorporated.
Pour batter into 12 prepared muffins cups. Bake at 400 degrees for 12-15 minutes, until done.

They taste lovely...hot out of the oven and schmeared with a little dab of butter.
