Easy chicken tacos with a Tex Mex twist are just the thing for busy nights. Throw the meat in the slow cooker in the morning and come home to a house smelling like a Fiesta at the end of the day!
I love this recipe not only because it's crazy easy, but there's endless options to put your own spin on it by changing up your ingredients.
I have used it with carnitas, pork tenderloin and, what I'm sharing here today, chicken. You can also add onions, jalapenos, diced green chiles or whatever else you like to the slow cooker as you throw in your meat and enchilada sauce.
Start by making the sauce first {is it weird that I dream of bathing in this sauce? It's kind of crazy good}. You'll want to make it several hours before serving your meal so the flavors can marry {I prefer to make it as I put my chicken in the slow cooker in the morning}.
You'll need:
- 8 oz. sour cream
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. smoked paprika
- juice of one lime
To be completely honest, I'm usually a "lil' of this, lil' of that" kind of cook. The measurements above are approximates and totally to your own taste. If you can't find the smoked paprika, it's no biggie to leave it out {but it is kind of woot, woot...if ya know what I mean}.
Mix it all up. Cover and refrigerate.
Cover and cook on low six to eight hours, until meat is cooked through. Remove the chicken to a bowl and shred. I like to add back in a couple of tablespoons of the enchilada sauce to the shredded chicken to make it really moist.
Serve in tortillas with chopped cilantro and crumbled Queso Fresco.
