When I was asked to partner with International Delight in this fun campaign, my original recipe for my Cowboy Muffins came to mind. The simplicity of that recipe made it easy to change up and add some fun to with the delicious International Delight Creamer and some other special touches. I replaced the milk from the original recipe with creamer...and the cinnamon with cocoa powder.
Besides creating unique recipes with this awesomeness, I love using International Delight creamer every morning in my coffee. The current flavor that has me waking up on the right side of the bed is Caramel Macchiato...it's a straight up coffee house experience in my own kitchen!
Below is the easy recipe for the Salted Caramel Mocha {Doughnut-Style} Muffins that can even be made on rushed weekday mornings.
You'll Need:
- 1/2 cup sugar
- 1/3 cup shortening
- 1 egg
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp cocoa powder
- 3/4 cup Salted Caramel Mocha International Delight Creamer
- 1/2 cup powdered sugar
- 1 tablespoon cocoa powder
- 1 stick butter, melted
In mixing bowl, cream together the first 1/2 cup sugar, shortening and egg. In a separate bowl, combine flour, baking powder, salt and 2 tbsp cocoa powder. Add the flour mixture and the creamer alternately to the sugar/shortening/egg mixture, beating well.
Fill 12 prepared muffin cups 2/3 full. Bake at 350 for 20 to 25 minutes or until done. Combine remaining powdered sugar and cocoa powder. While muffins are still hot out of the oven, submerge tops in melted butter, then dip in powdered sugar mixture.
