One last summery recipe to close out the season: Watermelon Smoothie!
It's something I want to enjoy all year long, y'all.
I went whole hog this summer and bought a fancy blender...not the fancy fancy one...but the fancy one (know what I mean?). I've used about 5% of its functions at this point. It's just a bit overwhelming from the $5 Hamilton Beach one that I've had since college...in the nineties. But, it sure can whip up this watermelon smoothie in all of five seconds. Five seconds...how is this even possible? Check out the recipe below.
The lemon is optional, but it adds a really tart, citrusy spin on this one. I often use my Young Living Lemon Essential Oil in this one...it makes it fast. My kids don't care for the lemon in theirs, but I really like it! You can just ease into that part of it...or just leave it out altogether.
I also like to freeze the Greek yogurt in an ice cube tray ahead of time for this recipe.
I then pop out the cubes and use them in place of ice in the recipe.
(makes four)
Ingredients:
- half a small seedless watermelon, cut into 1-inch cubes
- 2 cups vanilla Greek Yogurt (frozen into cubes)
- 1/2 cup almond milk
- 1/2 banana
- (optional): juice of half a lemon or two drops of lemon essential oil
- (optional): Stevia to sweeten (to your taste)
- (optional): Stevia to sweeten (to your taste)
Directions:
Add all ingredients to a blender and pulse on high until blended. Pour into four glasses and garnish with additional watermelon, if desired.
