These Cherry Almond Sweetheart Scones are perfect for Valentine's breakfast or even tea time (let's be fancy, shall we?). Whip them up for all of your special valentines!
I'm definitely on a homemade scone kick lately. I blame Downton Abbey for this new calorie-laden addiction. But seriously, how could I resist making sweet scones into Valentine-y heart-shapes? Cherry Almond Sweetheart Scones
These scones were not difficult to make, either. If you've never made homemade scones before, this would be a great recipe to start with. It's super simple and pretty much fool-proof.
I often make scones in the evening and then just warm them up in the morning for breakfast. These Cherry Almond Sweetheart Scones work well in that manner.
- 2 cups sifted, all-purpose flour
- 3 tablespoons baking powder
- 3 tablespoons sugar
- 1/4 teaspoon sea salt
- 1 stick salted, cold butter
- 1 (10 ounce) jar of Maraschino Cherries, (drained, but juice reserved)
- 1 cup heavy cream + 2 tablespoons, divided
- 1 cup white chocolate chips
- 1 cup white chocolate chips
I used a simple heart-shaped cookie cutter to take these up a notch on the sweetheart scale. Grab a pack here on Amazon. I prefer plastic to metal cookie cutters so they can't lose their shape or even rust over time.
Directions:
- Preheat oven to 400 degrees.
- Drain jar of cherries and set aside the juice. Chop the cherries into halves.
- In the bowl of a food processor, combine flour, baking powder, sugar, and salt. Pulse just until blended. Cut in pats of the cold butter and process until mixture is crumbly, but not over-mixed (the butter pieces should be the size of small peas). Pour mixture into large bowl and fold in cherries and almond extract. Make a small well in the middle of the mixture and pour in heavy cream. Mix just until ingredients are combined.
- Turn out dough onto floured surface and form a circle, with dough being about 1/2" thick. Cut hearts out with a cookie cutter. Place scones on a parchment-lined baking sheet and refold the dough again (and possible a third time) to get as many scones as you can out of it.
- Take remaining 2 tablespoons of cream, add a splash of cherry juice (but save the rest for the final glaze) and brush over scones.
- Bake for 15-18 minutes, checking for doneness.
- While scones are cooling, melt your white chocolate chips in a microwave according to package directions. Stir in two tablespoons of the reserved cherry juice (this tints the glaze pink!). Drizzle over scones. If reheating these, I like to just do it with my microwave on 50% power for about 30-40 seconds. I try not to completely remelt the drizzle.
