I first discovered Quaker® Life cereal back in college, in the nineties. One of my roommates always had it on her shelf in the kitchen area. One day I ran out of whatever I had been having for breakfast... and I "borrowed" a bowl of cereal from her. Ever since that day, my pantry has never been without a box of Quaker® Life cereal. My kids eat it all the time now, too. It's just such a nice, comforting taste. The lightly sweetened squares and the fun texture... they're all just kind of cereal perfection.
And we don't just save it for a breakfast food. No lie...in college, I would have a box in the car with me for my road trips home. It made a four-hour drive a lot less monotonous. Sometimes, I do a quick snack mix for my kids after school: a scoop of Quaker® Life cereal, dried cranberries, pecan halves, and white chocolate chips. It's simple to throw together and they devour it. I even include it in their lunch boxes, too. It would be yummy with Quaker® Real Medleys® or Quaker® Simply Granola, too.
Life Cereal Cookies
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 cup crushed Quaker® Life cereal {see photo below}
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 1/4 cup white sugar
- 3/4 cup packed light brown sugar
- 1 small box instant vanilla pudding
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 (12 oz) bag white chocolate chips
Directions:
In a small bowl, combine flour, cereal, baking soda, and salt. Set aside.
In a large bowl, combine softened butter, sugars, pudding mix (just use the powdered mix...do not add anything to it or make the actual pudding), and vanilla extract. Beat until creamy. Beat in eggs.
Gradually add in flour mixture. Gently fold in white chocolate chips. Do not over mix!
Drop by rounded, heaping, teaspoonfuls onto parchment-paper lined baking sheets. Bake in a preheated 375 degree oven for 8-10 minutes.
The white chocolate chips go really well with the cereal flavor. I also think cinnamon chips would be fun to try in this one...picking up on the cinnamon in the Quaker® Life. There's lots of fun flavor combinations you could try on this one. I think you could achieve a similar texture, but different flavor with Quaker® Oatmeal Squares, too.
Dunking these in milk only makes them better! Because cereal and milk...it's like they were made for each other {wink}.
