This Skinny Huevos Rancheros dish is the perfect lightened version of the classic Tex-Mex comfort food, with all of the flavor intact.
One serving is 10 Points Plus on the Weight Watchers Program.

I went back to Weight Watchers last week. After a three and a half year hiatus, I darkened their door. And I'm actually pretty happy to be back in that routine. I've had a lot of success with their program. Between babies, in 2005, I lost over 75 pounds on the program. I'm hoping to replicate that and this time, stick to it a bit better.
This is one of the dishes I fixed very often back in those days. My husband adores it. The original recipe came from the 2001 edition of The Complete Cooking Light Cookbook. I've tweaked it quite a bit over the years. The version here is now our norm. It's super yummy and very fast to throw together on a busy evening.
This recipe creates two servings, but can be duplicated easily.
You'll need:
- 1 15 ounce can of black beans, drained
- 1 14.5 ounce can diced tomatoes
- 1 7 ounce can chopped green chiles
- 2 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. Kosher salt
- 1/2 tsp. ground pepper
- chopped cilantro {to taste}
- 2 large eggs
- 2 flour tortillas
- 1/4 cup low fat shredded cheese
- 2 chopped green onions
Combine beans, tomatoes, chiles and spices in a large pan {can add in cilantro if you prefer it cooked}. Mix completely. Bring to a boil. Turn to low and cover. Simmer for 10 minutes.
This recipe is for two servings:
Remove eggs with slotted spoon and transfer bean mixture to on top of the tortillas. Top with eggs and cheese. Add green onions and more cilantro.
I even added a bit of the low fat plain Greek yogurt to mine. Very yummy! {If you do this, you'll need to add the additional points}. My husband eats his like a taco.

I used the calculator on My Fitness Pal to get the above results. Since they didn't provide any fiber information, I also plugged all of the ingredients into the Weight Watcher's Recipe Builder to arrive at the points value.

Kristi, this sounds delicious! And congrats on going back to Weight Watchers. I tried it for the first time last year and really liked the program. I loved being accountable during those weekly meetings. This skinny breakfast sounds amazing. I'm going to give it a try!
