Need a quick breakfast idea that'll melt in your mouth? These easy Cowboy Muffins are our go-to sleepover breakfast. Cowpokes love them, too!
This recipe came from a sweet friend of mine from Muleshoe, Texas. You know who you are, lady. Love ya.
You'll need:
- 1/2 cup sugar
- 1/3 cup shortening
- 1 egg
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 teaspoon ground cinnamon
- 1/2 cup sugar
- 1 stick butter, melted
Fill 12 greased muffin cups 2/3 full {don’t use paper baking cup liners}. Bake at 350 for 20 to 25 minutes or until golden brown.
Combine remaining 1/2 cup sugar and cinnamon.
While muffins are still hot out of the oven, submerge in melted butter. . .
. . .then roll in cinnamon sugar-mixture until well coated.
Serve warm {with a tallllllll glass of milk}.

Those sound and look amazing!!! They aren't on my diet either, but I think they'd be very impressive to make for company. And oddly enough I've been to Muleshoe before. That's way out there! Thanks for sharing the yummy!
